Ingredients
1 cup (150g) plain flour
One teaspoon of baking powder
Two eggs lightly beaten
1/2 cup (125ml) skim milk
1/3 cup (40g) grated vintage cheddar
400g can use sweet corn kernels, rinsed and drained
Two thinly sliced green onions (shallots), plus an additional to serve
Rice bran oil for shallow-frying
5 smoked salmon slices, quartered
1/2 cup (120g) light sour cream
Method
Mix flour, baking powder, and milk in a large bowl. Season.
On medium heat, heat the oil in a frying pan. In batches of 2 tablespoons, cook the batter for 1-2 minutes on each side until it is golden. Drain on a paper towel.
Serve on a platter with extra green onions, smoked salmon, and sour cream. Serve.
